Indian Chai – Cooking w/ Shruti
When I was in India, I loved drinking chai! Chai has many different variations but it is basically black tea, milk, sugar, and spices. Every person has their own preference for how they make it that they have perfected over years. My friend Shruti showed us how she makes chai that we served along with samosas. They were both delicious!
Ingredients:
- 3/4 mug of Milk for each person (soy or almond milk also works)
- 1/4 mug of Water for each person
- 1 Tbsp/person of Chai
- 1 shake Cinnamon + 1 Cinnamon stick
- 1 Tbsp of Ginger
- 1 palm full of Cardomom
- 1 tsp of Chai Masala
- Brown Sugar in serving cups by taste
Steps:
- Put everything except brown sugar into pan to steep and cook on medium high until it boils.
- Let it boil over to near top of pan, lift pan off of stove to let the foam to settle back down.
- Put back on and let boil over again. Do this a minimum of twice to release flavor.
- Strain & pour into cups with sugar.
