Mango Banana Guacamole – Vegetarian Delicacy
My sister is vegetarian so this week we decided to make something that she could eat. We made mango banana guac put over rice pilau and sweet and spicy tofu!
I was introduced to this meal by my coworker while I was volunteering at a hospital in Tanzania. We made mango banana guac over rice pilau and beef masala after work one day and I was quite impressed! I never would have thought to add mango and banana to guac. The tartness of the mango and the creaminess of the banana really adds flavor and makes the dish pop! It was so delicious over the top of the rice pilau that I ended up having it a few time while I stayed there. I ate pretty well in Tanzania!
My family ended up loving this meal just as much as I did back when I first had it in Tanzania. People went back for seconds and my sister wants to make it more often!

Ingredients
Mango Banana Guacamole
- 2 Avocados (only 1 in Tanzania because their avocados are huge!!!)
- 3 Diced Tomatoes
- 1 Small Chopped Onion
- 1 Bell Pepper
- 2 Squeezed Limes
- 1 Cut Banana
- 1 Cut Mango
- Optional: Other Veggies (you could even put in chopped carrots if you are into that!)
- Salt to Taste
Rice Pilau
- 2 Cups Dry Basmati Rice
- 4 Cups Water
- Oil
- Pilau Seasoning Mix (I had to improvise on this)
Sweet and Spicy Tofu

- 4 tbsp olive oil
- 1 block extra-firm tofu, drained and pat dry
- 1/4 c chopped red onion
- 1 tsp minced garlic
- 1/2 tsp ground ginger
- 2 tbsp sriracha sauce
- 2 tbsp soy sauce
- 1 tbsp rice wine vinegar
- 2 tbsp honey
Directions
Rice Pilau
Wash rice and put in rice cooker. Add water and cook. Once the rice is done add some oil and pilau seasoning. (We didn’t have pilau seasoning mix so I Googled the ingredients and improvised for the seasonings we did have)
Mango Banana Guacamole
Finally chop up onions, pepper, and tomato. Add to mixing bowl. Halve avocado and remove pit. Add Avocado and mash. Halve limes and squeeze over mixing bowl. Cut up mango and banana and add. Add salt to taste and stir.
Sweet and Spicy Tofu
My sister has an air fryer for her tofu to give it a fried texture without using the oil.
First, cut tofu into bite size pieces. Then place pieces in strainer and press down with a bowl to drain the tofu (draining can be done several different ways). Mix all ingredients together, and add half of the mixture to the tofu when starting to cook in the air-fryer. Cook at 400*F until golden brown, shaking the tofu around every once in awhile to cook evenly. Add the remaining mixture to the cooked tofu just before serving.
Heap the Guac on the rice pilau and sweet and spicy tofu when served. Enjoy and come back for seconds!
